These bite size cheese crackers are made with real cheddar cheese. Unlike the fake cheese crackers that are made with lots of preservatives and sodium, these are made with a few simple and clean ingredients.  They pair nicely with a glass of red wine and eaten plain or with a savory dip like hummus.

Mary's Gluten Free Cheddar Crackers

Recipe Yields 6 servings.

Ingredients (Before starting make sure all ingredients are cold )

8oz sharp cheddar cheese finely grated
1 cup of Tuscany flour
4 tablespoons of salted butter cut into pieces
1/2 tsp kosher salt
1/4 teaspoon of onion powder
5 tablespoons ice water

Baking Directions

Heat: Preheat oven to 350 F . Line a baking sheet with a silicone mat.  

Mix: Put the cheddar, Tuscany Blend, salt, onion powder and butter in a food processor and pulse until mixture resembles sand. Add ice water and pulse until dough comes together. Form dough into a ball, wrap in plastic and refrigerate for 1 hour.  

Shape: Roll out the dough to 1/4 inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square.

Bake: Transfer to prepared baking sheet and bake until crackers are golden brown, 10-15 mins.  Allow to cool before storing.
