I got this focaccia recipe from Sara Leibowitz who runs KitchenGuru.  She sells fresh baked healthy and delicious breads and pastries using Blends by Orly Manhattan Blend.  I am very inspired by her Instagram page since she makes so many yummy and impressive items with the Blends.  Recently she posted this photo of mouth watering focaccia bread.  I asked her for the recipe so that I could bake it and share it on my website.  The best part about this recipe is that there is NO YEAST = NO RISE = QUICK AND EASY RECIPE!  Try this AMAZING gluten free focaccia bread in two delicious flavors- Garlic and Herb or Zatar.  

Sara Leibowitz's Gluten Free Focaccia Bread

Dough
2 Cups Tuscany Blend
2 Tsp Baking Powder
1/2 Tsp Salt
1 1/2 C Cold Sparkling Water
2 Tbsp Olive Oil
1 Tbsp Maple Syrup

Garlic and Herb Oil
2 Tbsp Olive Oil
4 Cloves Garlic Minced
1 Tsp Dried Basil
1 Tsp Dried Oregano
1/2 Tsp Maldon Salt

Zatar Oil
2 Tbs Olive Oil
3 Cloves Garlic Minced
2 Tsp Zatar
Salt and Pepper to Taste

Heat: Preheat Oven 450 F

Mix: Whisk all the oil ingredients (either garlic and herb or zatar) and set aside.
In a stand mixer or by hand , whisk together Tuscany Blend, baking powder and salt. Add in sparkling water, olive oil, and maple syrup and mix until blended don't over mix. The dough will be sticky.

Pour the batter into the center of parchment paper lined baking sheet. Use Spatula to speed out in a rectangle . The dough should be about a 1/2 high.  Use your fingers to make indentations in the dough, then brush the oil on to the dough.

Bake around 25 minutes until golden brown.  Let it sit and cool for 10 minutes, slice and eat warm.
