Grilled cheese is one of those foods that EVERYONE loves at EVERY age.  This hardy snack takes 10 minutes to whip up.  Make a simple grilled cheese sandwich today and mix it up with some of my "add in" suggestions next time for an exciting twist on this classic sandwich! 

Simple Gluten Free Grilled Cheese Sandwich

Recipe Yields 4 Servings

Ingredients:
8 (1/2-inch thick) slices gluten free sandwich bread made with Tuscany Blend
12 ounces Monterey jack, Cheddar, Gruyere, or Swiss cheese, thinly sliced
4 tablespoons unsalted butter

Optional add ins
sliced tomato
sliced pickles
sautéed Onions
cold cuts
grilled veggies

Heat a large skillet over medium-low heat. Place 4 slices of gluten free sandwich bread on a cutting board and generously butter the top sides of each slice. Melt another tablespoon of the butter in the skillet and swirl around to coat the pan.

Lay 2 slices of bread, buttered side down, in the skillet. Put a few slices of the cheese on the bread. If you are adding extras, lay them on top of the cheese and cover with a few more slices of cheese. Top with 2 of the remaining slices of bread, placed buttered-side up. Cook, without pressing, until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small chunk of butter to the pan. Cook slowly, on medium-low heat until the cheese is melted completely and both sides are crusty and golden brown, about 3 to 4 minutes more. Repeat with the other 2 sandwiches. Serve simply or dip in marinara sauce.
