Red Velvet Brownie

From Modern Bread and Bagel

This rich brownie has a bottom layer of chocolate brownie and a top layer of red velvet brownie, and is topped off with cream cheese frosing. It’s as if a red velvet cupcake and a chocolate brownie had a baby together!

Red velvet Brownie

235g Sydney blend
20g cocoa powder 
1 1/4 tsp salt
1/2 tsp baking soda 
215g butter
335g sugar 
5 eggs
2 1/2 tsp vanilla paste
3 tsp red food coloring
150g buttermilk

Directions:

Step 1- Make the red velvet brownie 

Cream the butter and sugar together. Add the eggs, one egg at a time.

In a separeate bowl, mix together the dry ingredients and add half of this mix to the butter eggs and sugar mixture . Add half of the buttermilk and mix. Add the rest of the dry ingredients and mix. Add the rest of the buttermilk and mix. Set aside.

Chocolate Brownie 

375g butter or margarine
450g light brown sugar
4 X-Large eggs
375g dark chocolate, chopped 
120g  Sydney blend
3/4 tsp baking powder
98 g cocoa powder
1/4  tsp salt

Cream Cheese Frosting 

568g cream cheese
163g butter
1.5 lb confection sugar
3 tsp vanilla paste
2 tsp lemon juice

Step 2- Make the chocolate brownie

Melt the chcolate over boiling water or in a microwave. Cream the butter and the sugar . Add the eggs, one egg at a time. Add the melted chcolate.

In a separeate bowl, mix together the dry ingredients and add to the mixture of the chocolate, sugar, eggs and butter. Mix until all ingredients are incorporated.

Step 3 - Assemble and bake

In a 9-inch pan, spread the chocolate brownie batter. Spread the red velvet brownie batter on top.

Bake on 350 F for for 35 a 45 minutes. Remove from the oven and cool. Refrigerator for 2 hours until firm.

Cut and decorate it with the cream cheese frosting

Step 4 - Cream cheese frosting 

While the brownies are cooling make the frosting. Using a stand mixer with the whisk attachment, cream the butter with half of confection sugar. When that is mixed well, add the cream cheee and the last half of confectioner sugar.

Whip on high speed until creamy

Add the vanilla and lemon juice, and whip for more 5 minutes.
