Passover Coconut Macaroons

1 cup (250g) egg white
1 1/2 cups (482g) white granulated sugar
1 Tbsp vanilla extract
5 1/4 cups (624g) dessicated unsweeteed shredded coconut

Combine all ingredinets together, mixing with with your hands, until all ingredints are blended together. Use an ice cream scoop or hands (wearing gloves will be less messy) to make balls and scoop onto a cookie sheet. Bake at 350 for 20-25 min.

Optional- Melt dark chocolate chips/morsels in the microwave for 30 seconds at a time, or over a bain marie. Continue to mix so the chocolate doesn’t burn on the bottom. When chocolate is evenly melted, dip the bottoms of the macaroons in melted chocolate and set down to dry on the sheet pan. Dip the tips of a fork in the melted chocolate, and drizzle chocolate on top of the macaroons for a pretty finish.
